Shawarma gets its name from the Turkish word "çevirme", meaning "turning", a reference to the rotating vertical spit it's traditionally cooked on. Street vendors across the Middle East slow-cook it for hours until the outer layers are crisp and caramelised. The home version gets you there in a very hot pan.
