Tibs is one of Ethiopia's most popular dishes for celebrations. It's traditionally served in a clay pot called a "moseb" while still sizzling at the table. "Tibs" simply means fried in Amharic, every region has its own version, from thin slices to chunky cubes, mild to fiery.
