A rich, hearty Nigerian draw soup built on ground ogbono seeds, assorted meats and smoked fish. The ogbono gives it its characteristic thick, elastic pull. Deeply savoury and warming.

Did you know?

Ogbono seeds come from the African wild mango tree (Irvingia gabonensis). They contain a natural mucilage that dissolves in hot liquid and creates the soup's signature "draw" - that elastic, stretchy quality Nigerians know well. In Yoruba the dish is sometimes called apon; in Igbo-speaking households it's simply ogbono, named for the seeds themselves.

Ingredients

  • 100g, ground ogbono seed
  • 40ml palm oil
  • 200g, parboiled assorted meat
  • 2 (washed and deboned) smoked fish
