  • 180g, rinsed red lentils
  • 1 tbsp vegetable oil
  • 1 tsp curry powder
  • ¼ tsp turmeric
  • 120ml vegetable stock
  • 400ml, 1 tin coconut milk
  • ½ tsp salt
  • pinch, optional black pepper
  • 400g, chopped tinned tomatoes
  • ½ tsp, add at the end garam masala
  • 2 clove, minced garlic
