Jerk cooking was developed by the Maroons, people who escaped enslavement in 17th century Jamaica and hid in the Blue Mountains. They slow-cooked meat over pimento wood with Scotch bonnet peppers, deliberately using a smokeless technique so the cooking fire wouldn't reveal their location.
