Green goddess dressing was invented in San Francisco in the 1920s at the Palace Hotel, created to honour actor George Arliss who was performing in a play called The Green Goddess. The original had mayonnaise, tarragon and anchovies. Today the concept has evolved into anything vivid green and herb-led, avocado has replaced mayo in most modern versions.
